What resolution should I pick?
2x (144 DPI) is right for screen use; 3–4x for zooming or printing. The page-size readout shows the pixel dimensions each scale produces before you commit.
Do the JPGs contain the PDF's metadata?
No — rendered images carry no PDF metadata, author fields, or hidden document structure. They contain exactly what you see on the page.
